It tastes a lot better than it looks. Greek chicken with farro and fasolakia (Greek green beans). The green bean recipe I used was bland even with doctoring, so here's the chicken and grain recipe. I use the herbs and balsamic mix from the recipe as a marinade for the chicken.

Awww, thanks! I'm not cooking for a few days now, but I want to keep the recipe thread going. People can post cooking disasters there too, lol. We all need some r/shittyfoodporn material in our life for a laugh.

Gyūdon/Gyūmeshi

This is a type of Japanese comfort food that consists of meat - usually beef, but alternatively pork - mixed with onions, mirin, sake, rice and soy sauce; plus optional ingredients such as egg(s).

Please bear in mind that there are quite a few variations of gyūdon. Most recipes tend to have the same base ingredients, as listed above, but differ in extra toppings and side dishes. Below is the recipe that I followed.


It is the most basic version that was found; the only extra suggestion is a cooked beaten egg. I followed most of the recipe, but changed some of the ingredients; for example instead using the recipes recommended type of pickled red ginger (beni shōga) I used some kind of generic white ginger - I cannot identify what it is. Also it does not specify what type of sake that should be used, and maybe that is intentional, so for mine I used a junmai-type.

Polenta is one of my fav comforts food, I love it :heart: With some red sauce and cheese or mushrooms or whatever veggies! I grew up eating it, I fucking loved polenta day so much it became my official comfort food!

Thanks for sharing. I think I've had duck only once and from a mediocre restaurant. Does it taste "gamy"?

It is a little gamy yeah but it's not overpowering. It's got a much better texture and more flavour than chicken. Might actually be one of my favourite meats tbh.

I don't think its very game tasting, its nice. aromatic crispy duck is the one!!! pigeon and deer are 'gamy' i would say.

you want to try quail(not the eggs, the meat) one of the nicest things i've tasted!!

I've been thinking about trying quail eggs. They're so expensive and small. Might be worth it though. We'll see.

I have had the actual bird, but never tasted the eggs. The meat is one of the nicest things i've eaten, I have never seen it on the menu apart from the one restaurant i had it in. there's not much meat on them though!!

Chocolate chip banana bread:

3 overripe bananas, mashed
½ c mayonnaise
1 egg
1 tsp vanilla flavor or extract

1 ½ cups flour
1 tsp baking soda
½ tsp salt
¾ c sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg

1-2 handfuls dark chocolate chips

1. Preheat the oven to 350 F.
2. Mash the bananas with a fork. You may need 4-5 bananas total due to parts of the overripe bananas having large, inedible brown spots on the inside. Just make sure you have roughly the size of 3 overripe banana in the end.
3. In a large bowl, whisk the egg. Add the mashed banana, mayonnaise, and vanilla flavor/extract and whisk until few clumps of banana remain and the ingredients are well-incorporated.
4. In a separate bowl, combine the flour, baking soda, salt, sugar, cinnamon, and nutmeg.
5. Stir the flour mixture into the banana mixture.
6. Fold in the chocolate chips.
7. Pour the batter into a greased loaf pan and bake for 60-65 minutes.

Notes: Usually, baking soda and baking powder are not interchangeable, but I have subbed powder with no issues.

This is an expensive recipe but interesting enough that I think the effort is worth it if you want something different.

Flavor-wise, it's like an everlasting gobstopper from Willy Wonka. My tongue couldn't decide what the predominant flavor was. This was my first introduction to Moroccan cooking, and I was not disappointed. Both the chicken and the rice were great. I used spicy harissa by the brand Mina.

Modifications/notes:
1. boneless, skinless chicken thighs and skipped the broiling step. Be wary of overcooking because it will get dry. I needed only 4 hours on high, but my crockpot runs hot.
2. Only 1 tablespoon of molasses in the rice. This rice is sweet enough with that.
3. Reduced the harissa to 1/3 c and use the full 4 T of honey in the chicken.
4. I used spicy harissa by the brand Mina.
5. Don't be afraid to pile on that pomegranate if you don't mind the texture. I think the added tang/acidity really brings everything together.
6. I accidentally skipped the chickpeas. I don't think they're needed.

Easy Coffee Brownies w/ Chocolate Cardamom Whipped Cream

Equipment:

  • 8x8 metal or glass pan
  • hand mixer or stand mixer (or, if you hate yourself and have guns for arms, a whisk)
  • medium-sized bowl
  • large bowl with tall walls if using a hand mixer
Ingredients:
  • Ghirardelli's dark chocolate brownie mix. If you prefer Betty Crocker, so be it, but you're a cuck. If you can't do dark chocolate, at least try to get Ghirardelli because it is worth the money for once. Adjust the oil and egg ingredients as well as the cooking temp/time to the inferior box's specifications.
  • 1/2 c vegetable oil (subbing butter will result in a cakier brownie/less dense texture)
  • 1 egg
  • 1 tsp espresso powder
  • a handful of chopped, chocolate-covered espresso beans
  • 1.5 c heavy whipping cream
  • 3 tbsp cocoa powder
  • 1/3 c powdered sugar
  • 1 tsp vanilla
  • 1/2 tsp - 1 tsp ground cardamom to taste
Directions:
  1. Preheat the oven to 325 F per box directions
  2. Whisk together egg, 1/2 c vegetable oil, and 1/4 c water.
  3. Stir in brownie mix and espresso powder until thoroughly combined. Be sure to scrape the bowl for any dry patches.
  4. Add the chopped, chocolate-covered espresso beans and mix until evenly distributed.
  5. Dump the prepared brownie mixture into a greased 8x8 pan.
  6. Bake in oven for 40-45 minutes if using a metal pan, 45-50 minutes for a glass pan. (Do NOT use the clean toothpick method unless you want really dry brownies. Some debris of uncooked mix will remain on the toothpick. This is normal. The brownies will finish cooking as they cool.)
  7. Let brownies cool for 2+ hours or until the bottom of the pan is just above lukewarm and you can comfortably hold the bottom of the pan with your bare hands. Setting the pan on a pie rack or the grates on a gas stove will accelerate cooling.
  8. When the brownies have cooled, mix the whipping cream, powdered sugar, cocoa powder, vanilla extract, and cardamom on the lowest setting until well-incorporated. I would add the cardamom in small increments with tastings in between, particularly if you're new to using the spice.
  9. Then, turn up the hand or stand mixer to the highest setting your machine & bowl can take without splattering the whipped cream everywhere. Whip until stiff peaks form. You can scrape the bowl if using a stand mixer, but this recipe makes slightly more whipped cream than you need, so it's not necessary.
  10. Spread the resulting chocolate cardamom whipped cream over the brownies.
  11. Store in the refrigerator due to the whipped cream.

The good old scotch pie, can't be beaten. It's made of dead sheep and hot water pastry. It also comes in macaroni and American bean versions. I particularly like the American bean version which is the pie with baked beans on top followed by mashed potato on top of that. Awesome. I don't know why it's called American nor do I know what that green crap is in the picture, it must of mistakenly been left there.

Looks like rosemary, lol. I'd be willing to try it. What else does the traditional version have in it besides meat?
