I've heard cases of people who have done extreme workouts and died. Also of people who have not worked out in a long time and we're finally active and had to go to the hospital due to something building up in the muscles, if I go hard in the gym after not moving or being active in weeks. Is there a chance of death? Or is this the non-method I believe it's something that the muscles released that poisoned you, but I could be wrong.

Absolutely a non-metod.

It is way more likely that you rip your muscles or hurt yourself in other ways. Maybe even brcome unconscious.
But it is insanely unlikely you will die from it ^^

I wondered something similar recently about working out in peak summer temperatures while dehydrated etc. If you can ensure you're not found, how likely is death?
