Considering going for an apprenticeship in butchery for SN access

It's a possibility... I'd likely get tempted by sharp things, but that isn't likely to happen for me.

Do they use SN at that stage? I truly don't know. I imagine it's used more in meat processing plants- although I suppose they have butchers there too.

Agree, I don't think butchers have room to actually age the meat. I think they do that close to farms.
