SN protocol recommends doing it late at night around midnight but I feel that this time would be more obvious as people are sleeping, noises would be more obvious. In my case I am planning to take it at a hotel and I was thinking around 11am would be best, as most people are active and awake at this time they wouldn't think too much about the noises that may occur. What time do you think would be a good time to take SN and why?

11am would be the worst possible time at a hotel. That's checkout. Put some music and fans on. SN shouldn't be that noisy. You want to pick a time when no one is going to walk in and try to rescue you. That's probably why people recommend midnight.

do it in the bathroom, extra walls if you are worried about sound. also turn on tv. if you do it in the bathroom, put a sign on the bathroom door for housekeeping to call first responders. put do not disturb sign on the main door.

I can't do midnight, since I'll be pretending to be going out someplace with my friends during the day.

I think most hotels have check-in at 3pm (give or take an hour). After you're checked in, no one should bother you in your room. So.....really any time after check-in should be fine.
