I am currently saving up pills eg Olanzapine , Diazepam etc for my method. I'm keeping them all in screw top jars in the dark, away from heat etc. What concerns me is I've read online about pills losing their potency once removed from a blister pack. Is this true? Or just the medical system covering their ass?

It is true. The packaging meant to keep the condition of the pills, taking it out of that means likely lasts shorter depending on how you store it. You might be able to notice if pills are losing potency/degrade or even dissolve because of humidity but it also may not be noticeable which would be worse.

What if I have them in a cool dark place away from humidity?
I should add I intend to store them for 3 months

Those are good storage conditions but if you want to err on the side of caution, a doctor/pharmacy likely can answer more specific questions and tell you optimal storage method.

The active ingredient will very likely be ok if they're stored in a cool&dry pace. Some physical changes might happen like little discoloration, consistency...
If your jars are not full, you may add some cotton or something on top of the pills so there would be very little space for air to be in.
