I'd spend my time traveling around the world every few years so I wouldn't be deemed as suspicious due to my lack of aging, go by different identities, etc. What I would ultimately do on earth is pretty much do good when I can. Help others when possible. I'd be the kiss of death for people that desire it. I'd spend my days providing people with a peaceful death and make sure they die with dignity. If I can't die myself, I'd at least help others travel safely to the other side. It's the least I can do. I know many people would see that as brave, thoughtful, and angelic... No matter if I do good, I'll always be lonely and I'll always be empty. I'll always have to remain guarded and falling in love is something I couldn't bare as an immortal. It complicates so many things... Being immortal would bring the ultimate pain for me.

Well, given the fact that absolutely nothing would be able to kill me I will just become the biggest organ donor of all time :D basically donating all of my organs every day. And as my doctors would know that I am immortal they wouldn't have to be carefull when taking the organs out of my system so it will be relatively fast for them and for me as I will want to have time to play videogames for the rest of eternity.

Man,you got me daydreaming hard now :D

Or you could spend your time inventing a very powerful sleeping pill. Maybe you can't die, but you could sleep for 20 years or more at a time like Rip Van Winkle.

after freaking right the fuck out, i'd probably look into "cheating": being permanently e.g. cryogenically frozen, hooked up to anaesthesia/carfentanyl/N₂O-generating chamber, etc... or simply having most of my brain surgically removed. i think i could tolerate being alive without higher brain functioning. if i had to be conscious i would go utterly insane. surely everyone would, after the first TREE(TREE(3)) years, considering that post-sanity period is still a mere 0% of one's lifespan. depending on what happens, seamless/perpetual consciousness gets tricky after a while, so hopefully this can't happen.

compared to this, even eternal reincarnation seems like a doddle, by virtue of consciousness being split up... but both scenarios are ultra-torture.
