Would the SN method at a cheap b&b be too noisy?

It depends if it's privately owned and the owner sleeps downstairs... I would probably choose a larger chain motel or hotel. They can be equally cheap but people don't usually care if someone is making gagging noises and few would notice a loud thump if you happen to fall/collapse.
