Assume, for the sake of argument, that things like cost, logistics, etc. don't matter. Which method is preferable: inert gas (exit bag/Nitrogen) or full suspension hanging? If there's anyone out here who has attempted both or has knowledge of both, what's the difference in how each method feels?

Easy! Inert gas by far. You just pass out without pain, nausea or regret because you don't even notice that the nitrogen has replaced oxygen.

I agree.
So why are we mostly choosing SN then?
High price and can raise suspicions.

SN is cheap, does not arouse suspicion and is a painless method.

Because SN is cheaper and the setup for inert gas is more complicated and easy to mess up.
