Help Sodium Nitrite oxidation

So I wanna test my sn but I cannot reseal it properly and it will oxidize into sodium nitrate, right? So what if i put the required dose of sn in gelatin capsules, the sn will be fully placed into both part of the capsule and then sealed that way there won't be air, right?

Gelatin capsules aren't at all airtight. It may help - but if the container can't be properly resealed, barely.
