the purity has to be higher than 95℅.
the ONLY ingredient has to be sodium nitrite, or NaNO₂.
this kind of product is usually design for lab tests and reactions. it's not like the curate salts that people who curate meat at home use, these curate salts have more than one ingredient and the percentage of NaNO₂ is very low - their purpose is not lab tests and reactions.
also, don't mistake nitrite with natrate.

sodium nitrite is not widely available in the us. sodium nitrate is everywhere. you need to make sure it is nitrite not nitrate
