Its because the wrists are small and contain all the very complex and delicate vessels/nerves/tendons/structures needed for your hands to work. If you even slightly damage any of those, it could have life changing consequences in respect to loss of mobility/sensation/use of your hand(s).

What Clouds said. You would have to cause severe nerve damage on purpose to cut deep enough. Only a surgeon has that precision.

Wrists are much MUCH more specific, intricate and delicate than '1-2cm'. You need to do some detailed and thorough anatomy and physiology research of your own for this, if you are set on it, rather than asking random strangers very broadly on a forum.
