I can't find the option to switch from mobile to desktop mode, any help would be appreciated.

Which web browser are you using (Chrome, Firefox, Safari, etc)? You might be able to change that on your end.

Its a derivative of Chrome, but most of its features don't work as well anymore. Desktop mode on it is one of those that doesn't work anymore.

Unfortunately, no, this specific fork of Chrome doesn't allow for extensions or addons.
