The plunger might put SN dust everywhere when you pull it up and release the pressure. I was looking at the "fellow atmos" container for my coffee, it does the same thing but via twisting.
A normal completely airtight container should also be fine.

I'm keeping the sodium nitrite in its unopened original packaging inside the canister. It came in a small sealed bag. Is that ok? It's 150mg.

Yeah that would be fine, if the original packaging looks airtight you can probably get away with storing in a normal container somewhere out of the sun

Just put it in a mason jar.
