Basically cut two holes in the trashbag, one for the exhaust, one to not overfill and explode the bag, put head into the primary (pre existing) hole and tighten it while the car is running.

i will only really have access to a new-ish car(~120g/km emissions) with a catalytic converter. Also the car is primarily driven at >1500rpm, would stomping on the gas help get some of the carbon out of the cat?

Sadly this doesn't sound like a good idea. I've heard catalytic converters have put paid to this suicide method. I would have liked to go this way myself.
