Hey there,
Used to be a chef, love this topic. Sorry for the lengthy reply. There's this really simple dish from Italy that would have originated as one of those common dishes youd see with poor families, as it'd really only feature ingredients that'd be considered "pantry staples." Pasta aglio e olio is a very easy to make dish consisting of spaghetti that is taken from the water just before al dente and finished off in a pan of olive oil (a decent amount of olive oil) that youve lightly sauteed garlic and chili flakes into already. After that, you throw in a little parmesan and some parsley.
The reason its easily my favorite comfort food is not only the fact that you can pop that bitch off as quickly as pasta boils, but it does bring me back to when times were much simpler and i was doing my thing in the kitchen, surrounded by a bunch of other pirates who cared. Things arent like they were, but for about 20 minutes (usually around 2 to 3am) i get to just go back. And that's alright. Thanks for readin.
