So glad the site is back up and working again. I hope it continues to work well for at least the next 24 hours while we have this party.
It's pretty early morning here and I am probably going to go back to bed for another hour or so, but I noticed
@Jean4 wanted me to bring hot buttered rum, So I thought I'd publish the recipe here in case anyone else actually wants to make some in real life and join me. It's relatively easy to make. It's one of those things where you can put in the things you want and leave out the things you don't want as far as spices & that go. For example, I always leave out the cloves because I don't like cloves.
The recipe I follow is the one from the Pioneer Woman, Ree Drummond. I also noticed that January 17 was apparently National Hot Buttered Rum Day and we all missed it, so I thought we could just celebrate it today instead. So if anyone else wants to join me, here's the recipe. As long as you leave it in the fridge for an hour or so, the butter mixture should be fine. I don't think you have to leave it in there overnight. I'm just going to make a batch of it this morning and leave it in there for an hour or two, so I can have it a little later when I start drinking.
Ree Drummond's Pioneer Woman Hot Buttered Rum
Ingredients
Butter Mixture:
2 sticks (1 cup) salted butter, at room temperature
1 cup packed brown sugar
1/2 cup honey
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
Cocktail:
16 to 20 ounces dark rum
Boiling water, for serving
Canned whipped cream, for serving, optional
Mini marshmallows, for serving, optional
Cinnamon sticks or star anise, for serving, optional
Directions
- For the butter mixture: Add the butter, brown sugar, honey, cinnamon, cloves and allspice to a medium bowl. Using a rubber spatula, mix everything together until well combined. Transfer the mixture to a mason jar and screw on the lid. Refrigerate until ready to use.
- For the cocktail: Add 2 tablespoons of the butter mixture to each coffee mug. Pour 2 ounces of rum into each mug. Top off with boiling water and stir to melt the butter. Garnish with any or all of the whipped cream, mini marshmallows, cinnamon sticks or star anise and serve.
I'm going back to bed for a little while. And then I'll get up, get dressed, and get my coffee and then I'll be back. Depending on whether or not I actually fall asleep again, it could be sooner or later.
