I've been doing quite a lot of research using medical research papers. Nitrate becomes nitrite in the body. The process for overdose/death takes longer and effects are only seen 1-6 hrs after. The dosage must be higher.
So its not as quick and you run a greater risk of being found but it seems like it should do the job?

Acute Toxic Effects Human lethal doses of 4–50 g (equivalent to 67–833 mg kg−1 body weight) have been reported. Toxic doses range from 2 to 5 g (RIVM, 1989, WHO, 2011) of NO3. These values are equivalent to 33–83 and 100–150 mg kg−1 body weight, respectively.So its not as quick and you run a greater risk of being found but it seems like it should do the job?
