Anyone know know which shotgun would be easiest to use and what type of ammo would be best

If i were to do the shotgun. I think something short would be easier to control. Maybe a break action double barrel 12 gauge.
As far as ammo. Slug or 00 buckshot. Both have a lot of muzzle energy due to their mass.

Spazreal is correct. 12 gauge, but most important is ammo, which is also correct - slug or 00.

How do you prevent the gasses from pushing your head away?

That can be an issue - or flinching when pulling the trigger - leaving less-than-optimal outcome. Point up, stock solidly planted, apply pressure into target, place head against something.
