How can I determine the amount of SN I will need to die depending on my height and weight?

Hopefully someone uploads the table I donr have it. 2 gram is supposedly enough, 25gram is therefore recommended for me, 6 foot 2 with a dadbod

You don't exactly know. I mean it would be easier, but a larger dose means also a higher risk of vomiting, and therefore expelling some or most of it, therefore increasing the risk of being saved. The lethal-per-kilogram doses are often (although I'm not sure if for that one too) figured out on rats, and rats can't vomit, so it doesn't include this important factor. People who follow the Stans Guide and not mess it up seem to die anyway unless they are found too early or something, but it's not like we have proper scientific research or something.
