Sodium Nitrite is listed by the Saudi government as a substance that is used in making explosives, which makes me reluctance about ordering it from abroad because I don't customs to think I'm a potential terrorist. Do you have any idea about local suppliers or foreign suppliers that know how to hide the SN?

I wouldn't advise doing something like that if it gets you a visit. Trying to smuggle something internationally wouldn't bode well. Besides someone already running some sort of backwater operation, there aren't reputable suppliers that will do that sort of thing, as they want to stay in business and not in prison.
Maybe government has forms that you can submit that detail a reason why you are using it so they don't knock down your door? From your post I can't really offer much advice as I don't know if SN is marked as a warning or outright illegal to own.
If you can't outright buy it, or can't submit a form to get it(you have an engineering degree), you'll have to make it yourself. I don't think I can offer any other advice without providing explanations to potentially break laws.
