I was able to track down SN. I got an email from the supplier asking what I'll be using it for. Whah do I say? I know it's used for curing meat but I don't know any background information to prove I know what I'm doing. Please help! What can I say I'm using it for? I need to sound like I know what I'm talking about.

Im not sure of any other reasons to say, but i would go a litle detailed with curing route.

Sodium Nitrite inhibits bacteria growth on food, maintains texture and juiciness of the meat during curing and cooking, while also enhancing the flavor profile and giving it the pink color.

Im not sure how well that would work and if they would buy it or not.

I said the sodium nitrite for taxidermy purposes to the psychiatrist after my failed attempt & they believed me, not sure if it is entirely believable though lol

I would think you trying to go into much depth would be a red flag -- like you were trying too hard to convince them you weren't up to no-good, ya know?? I would just say I'm wanting to try my hand at making my own bacon and leave it at that. 🤷🏻🤷🏻

The safest bet is to say you are using it to preserve steak.
