As the title says, im looking for any recommendations of which tent would be best? I read a thread on here before about someone who succeeded but I can't find it, any help appreciated

Any decent tent with a good water resistance rating. Probably 2-man size is best because you need room for the coals and yourself. As few vents as possible because you'll need to seal them up. Also, an attached ground sheet makes things easier. Don't get one with one of those "peak-type" vents, where it's open at the top and there's a canopy over it. Too hard to seal.

Keep in mind ppl have used just tarps and stuck their heads under it with the coals. I don't recommend that though.

That's the problem most i see are double layered, a mesh inside with a waterproof shell that goes over the top
