I remember the thing being discussed here in the past; naturally nitrites turns into nitrates as time pass by. The exposition to air accelerate the process.
You can find other biology articles online about nitrites conversion into nitrates.
By the way this isn't going to happen as quick as many imagine. Just keep the box in a dry place to avoid problems.
