Dubonnet Rouge, chilled with a lemon twist.
Few restaurants offer this classic anymore, but I like to order it as my aperitif of preference when available. The Queen Mother passed her preference for Dubonnet Rouge on to her daughter, and former US VP Nelson Rockefeller also had a fondness for it. Originally created in 1846 as an anti malarial quinine medicinal for French Legionnaires. I've always enjoyed it, and appreciate the history behind it as a Boston schooled bartender.
