Hey everyone!
I've been eating kind of the same thing lately. Stewed turkey, vegetables and some carbs such as barley or pasta.

I made mashed potatoes and some beef but it was also boring. I'm currently looking for a delicious and simple enough recipe, but web search suggests something either too complicated (I cook baked meat with prunes only when I have company) or too plain.

Can anyone please recommend me a cool recipe? Maybe some family recipe that is not on the web, or some traditional/cultural food. Thanks!

I don't know what your diet is like but here are some easy recipes.

Bacon, Egg Fried Rice.

Ingredients:

2-3 large eggs at room temp
3-4 strips of bacon (Thick bacon works best)
A bowl of leftover rice at room temp
2 tsp of oil
1/2-1 tsp of sea salt
1/4 tsp of black pepper
1/4 cup of diced shallot. (Onions works too.)
2 large cloves of garlic, diced.

Directions:
Pour the oil in the pan/wok and let the oil heat up.
Cooked the bacon in a pan/wok.
Let them cool off and then dice the bacon or break them to small pieces by hand.
Set aside.
Pour the bacon oil from the pan/wok into a small bowl and set aside.
Beat the eggs with salt and pepper and set aside.
Pour some bacon oil onto the pan/wok and discard the rest or you save them and use them for something else.
Cook the diced shallot until they are nice and soft.
Throw in the garlic and cook them for about 30 sec.
Next pour in the eggs, and scramble them. While the eggs are still runny, put in the rice and bacon and mix them in with the eggs. Cook until the rice is nice and hot.


Omelette with Garlic, Rosemary Home Fries.

Dill, Cheese Omelette


Ingredients:

1/2 tbsp of unsalted butter
2 tsp of dried dill
1/2 tsp of sea salt
1/4 tsp of black pepper
2 large eggs at room temp
1/2 cup of shredded cheese at room temp.
(any type you like)

Directions:
Beat the eggs with the salt, pepper and dill.
Melt the butter on the pan.
Pour in the eggs and let it cook.
While the eggs are still runny, put in the cheese and fold the egg, covering the cheese.
Let it cook for about 30 secs.

Note: You can put spinach in there too if you like but you must sauté them first.
I also recommend using feta cheese.

Easy Sauté Spinach

Ingredients:

1/2 tbsp of unsalted butter
Half a cup of spinach
2 garlic cloves, minced
Pinch of sea salt and black pepper

Directions:
Melt the butter in the pan.
Put in the garlic and spinach and cook on high heat until it is no longer moist.

Note: The use of butter helps get the moisture out. You don't want the spinach moist when you put on the omelette.


Sour Cream and Chives Omelette

Ingredients:

1/2 tbsp of unsalted butter
1/2 tsp of sea salt
1/4 tsp of black pepper
2 large eggs at room temp
1/2 cup of cream cheese at room temp
Fresh chives for garnish
Sour and cream chips for garnish

Directions:
Beat the eggs with the salt and pepper
Melt the butter on the pan.
Pour in the eggs and let it cook.
While the eggs are still runny, put in the cream cheese and fold the egg, covering the cream cheese.
Let it cook for about 30 secs.
Place on a plate, crush some sour cream chips on top and garnish it with the fresh chives.


Garlic, Rosemary Home Fries

Ingredients:

1 tbsp of unsalted butter
1 1/2 tsp of sea salt
1 tsp of black pepper
1 tsp of garlic powder
2 tsp of dried rosemary
2 Idaho potatoes

Directions:
Wash and scrub the potatoes cut them in cubes with the skin on.
Bring a pot of water to boil and put in the potatoes and let it cook for 5 mins.
Put the potatoes in a bowl let them cool off and season them with salt, black pepper, garlic and rosemary.
Melt the butter in the pan and put in the potatoes. Cook them until they are crisp.

Note: When I make this, I boiled the potatoes first and set them aside then do the omelette first. Then cook the potatoes in the pan after. This way you don't have the taste of garlic and rosemary when you make the omelette.


Spinach, Tomato, Tuna Sandwich

Ingredients:

A 5 oz can of tuna in water
1 1/2 tsp of olive oil
1 1/2 tbsp of mayonnaise
Pinch of sea salt and black pepper
2 slices of tomato
Spinach
2 slice of bread

Directions:
Open the can of tuna and drain out the water.
Put the tuna in a bowl and pour in the oil and mix well while breaking down the tuna.
After it's mixed well, mix in the mayonnaise, salt and black pepper.
Set aside.
Toast the slices of bread.
Sandwich the tuna on the slices of bread along with the amount of spinach you would like, and the 2 slices of tomato.

I be doing pasta with spinach too but I also add in mushrooms and tahini sauce.

cube 3 pounds of chicken (or buy cubed if u r lazy), mince 4 cloves of garlic (just keep chopping until it looks sort of small), throw in bag,
add all of this to same bag --->(1 tablespoon chipotle chile powder, 2 teaspoon ground cumin, 1 tsp oregano, 2 tsp salt, 1/2 tsp pepper, 4 tablespoon apple cider vinegar)
shake and leave bag on table/ wherever

Start cooking 2 cups white rice in rice cooker. Make sure your rice cooker is the kind that automatically shifts to "keep warm" when the rice is done (I think most do)

take one can of black beans, dump in pot
take one can of corn, dump in pot (same pot)
add 1 tsp chipotle chile powder, 1 tsp ground cumin, 2 tbsp lime juice

take 4 bell peppers, slice (make sure to cut and rinse out seeds), put in bowl
take 1 red onion, slice (try not to cry), put in same bowl
take 1 tsp salt and 1/2 tsp oregano, put in seperate small bowl next to the pepper/onion large bowl

take butterhead lettuce, cut into thin strips, put in bowl

Start simmering the beans/corn on low heat and just leave it there indefinitely (until you finish everything else), stir occassionally

put 2 tbsp olive oil in 2 pans (4tbsp olive oil total), dump chicken from bag in pans, cook medium high
slice a chicken cube open with ur spatula and check to see if cooked, eat one from each pan after 7(ish) minutes, if you undercook the chicken you will get sick and if you overcook it you'll be sad

Put cooked chicken cubes in big bowl, cover with a paper towel or something

add 1 tbsp olive oil to each pan (same pans you just used for chicken), add bell peppers, add the salt and oregano in that small bowl you left next to the large bowl, flip with spatula until it looks semi-brown and mushy
(shouldnt take that long)
Put cooked peppers/onion in a big bowl, next to the cooked chicken bowl

Take beans/corn off stove at the same time and throw in a big bowl next to the cooked chicken and cooked pepper bowls

Take the white rice out of the rice cooker and into a big bowl. Add cilantro (1/2 cup), 4 tbsp lime juice, and 1 tbsp olive oil. Stir

Get shredded cheese and storebought gaucamole, put on table

get tortillas, add ingredients, and wrap --> look up how to wrap burrito for help

My simple to go is chicken stew consiting of potatoes, carrots, onion, rice and any spices you like, rosmarin, thyme, garlic, salt, curry, etc.

You can put pasta instead of rice and the chicken can be any part, like legs, breast, etc.


Btw, don't throw away the stock, you put all the ingredients there.
Btw #2, the more rice or pasta you put in, the more it will be a stew and not a soup. The rice / pasta will soak in the liquids, so it becomes a stew, if you want to.
