Maybe a stupid question but does anyone know about Sodium Metabisulfite Disulfite Pyrosulfite? this came up in the similar section to sodium nitrite but I can't find the potency of it.

The various types of sodium are not in any way interchangeable.

If you review the ICSC entry for SODIUM DISULFITE you will see under 'Ingestion' that it only causes:

• Abdominal pain
• Diarrhoea
• Nausea
• Vomiting

These are non life-threatening effects, and differ from those of SODIUM NITRITE (SN) where, as we know:

Effects of short-term exposure​

The substance is irritating to the eyes. The substance may cause effects on the cardiovascular system and blood. This may result in lower blood pressure and the formation of methaemoglobin. Exposure could cause death. The effects may be delayed. Medical observation is indicated.​

So I'm afraid it really doesn't look like sodium disulfite is effective at all as a suicide method.
