Some people have had success, though there's talk of Poland clamping down on SN exports.

Google the Polish for SN(azotan sodu). Make sure you look up nitrite(E250), not nitrate (E251).

I don't have sources. Look up previous European SN threads for source initials.
Same for Ukrainian source initials.

Having a means to an exit is such a good feeling. I bought SN but later backed out of the order.. wish I didn't though. Hope you manage to have a safe trip if you decide to use it.

Congratulations! I bet that must feel like such a weight off your shoulders. Hopefully everything arrives without any issues and/or unintended consequences :D remember if anybody tries to question you about why you have SN there are plenty of reasonable reasons for why you'd have it. I suggest looking it up but I believe SN can be used as a curing salt in a lot of situations, and I'm sure it has other functions as well :)
