Food grade//Curing/Industrial/Lab grade does not matter. It's exactly the same chemical. As long as it's over 95%, it will work.

That source sells sodium nitrAte, which is why it doesn't work. You need sodium nitrIte. Again, the grade--food, lab, etc.--does not matter.
