Does sn damage the organs in any way? Is there a chance of waking up with severe organ failure ?

I believe so. But it happens in the later stages of methemoglobinemia where apoptosis of many cells have occurred. Oxygen delivery to the tissues is disrupted by methemoglobin and causes many cells around the body to die, but at this point you're pretty much almost dead anyway. This is when methemoglobin levels are like around 60-70%

If there is any organ damage from waking up from say not taking enough, I really doubt there will be severe organ failure. Before cells go through apoptosis from hypoxia, they first go through anaerobic respiration and run on glucose for a bit.

Also the nitric oxide (produced in the stomach when nitrite reacts with stomach acid) has a protective effect over organs from oxidative stress for a while.
