I'm thinking of making myself dinner tonight but I don't have much energy to make my usual go-to meals. Anyone have recommendations for simple food to make?

Budget is not much of a problem, but preferably easy to aquire ingredients and not too many dishes to wash after.

Potages are pretty good: Literally just boil whatever vegetables you have, making sure to include at least a potato, then shove it in a blender. Adjust the consistency with the broth/milk/cream, shove whatever spices you want.

Random meat and veg in a slow cooker, throw a bunch of stuff in and let it all soften up, one pot meal

ground meat
mix soy, brown sugar, garlic, chili powder into a sort of sauce. if you dont have these, you could probably get away with bbq sauce too. it would be pretty good.
green onions
rice

cut the green onions, put in with meat in skillet
while thats going on cook some rice. i use a rice cooker but a regular pot works too. id put a bit more water than the 1 to 2 cup ration just because sometimes when you use a pot the water evaporates and there isnt enough water for the rice. let it get to a boil, put rice in, let it get to a bubble again and then put the top on to low and simmer. not always sure since my stove is kinda bad and needs maintenance but it takes probably 20 mins at least. try not to ever let the top out though unless you need to.
anyway, when meat is golden brown throw the sauce in, stir, and let it simmer on low. it may be watery if you are using the sauce but thats OK it WILL cook down and be very good.
put that stuff over rice and BAM. you have food crack and only a skillet and pot to clean.


another one: trashy af tacos or burritos do whatver you want
you do need a crockpot for this.
some chicken. especially if you have that skinless boneless chicken crap. this is great for cooking that stuff down to make it edible.
if you need extra flavoring, chicken boulin or stock.
some taco shells, tortilla, nacho chips, and if you are being really fatty some tater tots.
i dont think i need to tell you you can put tomatoes, lettuce, guac, salsa, side of rice, cheese on the taco, i mean make it however you want. personally im a lazy ass so i just get some cheese, taco shells salsa, sourcream, rip up some lettuce and be done.
you probably do need seasoning. a packet of taco seasoning is absolutely fine but cumin, salt, pepper, chili powder, garlic, and onion powder is probably enough. bonus points if you use salsa or tobasco too.

so throw your chicken in. frozen or thawed, i do it either way. if its frozen you just put your seasonings in a bit later when they arent antarctic glaciers. if its thawed throw the seasonings in.

cook on low for 3-4 hours, high i think may be like 2-3ish? i usually dont use high setting. anyways you just want your chicken to be super soft and pulls easily apart. when it is take it out the chicken rip to shreds and put back in. persoanlly i do it in the pot sometimes i just dont scrape the bottom as i dont usually need to?

after you are pretty much done, the rest of the work is just assembling your taco/burrito whatever.
