After looking at the night night method and seeing that if the carotid arteries are blocked for an extended time a person will eventually pass out and then die. Would about anything constricting your arteries result in death in this case?

The question isn't constricting the artery, because yes, but it's constricting only the arteries. Otherwise you can trigger suffocation and SI kicks in

Yes, You can die. Constricting Carotid arteries would let you die peacefully.. do update how you'd achieve this. Also, you may wanna look into Partial Hanging
