This might be a stupid question but what would happen if im hospitalized and continue refusing to eat? Are the staff legally allowed to force me to eat?

In most countries they will hook you up to an IV line and pump the nutrients right into you until you agree to start eating again.

But ive seen VSED proponents claim that you have the right to refuse medical treatment including eating and drinking? Or maybe they just meant that it if your terminally ill or something.

Your rights vary greatly depending on where you live. Where you do have the right to refuse, it's usually contingent on you being in sound mind. Many medical professionals will argue you aren't of sound mind if you want to die a slow, painful death.
