The people that VSED in a hospice are sick and usually already close to death. The doctor usually gives them painkillers, benzos, sleeping pills to make it more peaceful for them, and they are closely monitored,. Outside of a medical setting VSED wouldn't be as peaceful. Starving to death is one of the worst ways to die. If someone is young and healthy, it would take them a lot longer to die and wouldn't be as peaceful without all the drugs they would give you in the hospice. Its not necessarily guaranteed to be successful or without risks if you fail. If you were unable to continue it to the end, you could end up with organ damage if you starved yourself for an extended period of time and survived. I think someone would need a will of steel to be able to voluntarily starve themselves and not give in at some point and eat something especially if they are healthy.
