I paid for SN last thursday, the seller is a small Spanish chemical company. I paid by transfer, so the paymanet can last up two working days to be in their account. I don't have any response by them, apart from the first one when I ordered, in which they showed me how I had to pay (transfer). I'm beginning to think about giving them a call, to be sure that they received the money and that there isn't any problem.

What should I say if they ask me what do I want the SN for?

Many cured meat products are treated with sn to keep them red/pink. Keen fishermen often make their own bait, which also requires sn.

Do you need SN to make jerky meat at home?

There are ways to do it without SN, but if you google it you'll see how SN comes into it.

Tell them you work in the meat industry and you need the SN for the meat.
