Avoid the sham-a-lamma take, go for the original.

If you're in the mood for some concentrated what-the-fuckery, go for Gintama. Despite the what-the-fuckery it does get serious when the time calls for it. When it's time to get serious, it does provide some very gripping stories. The people behind it are geniuses.

Got a bunch and not sure what you'll have already seen so I'll list loads.

Would recommend Mob Psycho 100 for a decent story and great action scenes. One Punch Man is a good one for pure easy-to-watch action. Parasyte is a good darker anime to watch, as is School-Live! and Girls' Last Tour. Demon Slayer hits the spot for some nice battle scenes and a good story. I'm trying to get through Fire Force at the moment which seems to be good.

The Disastrous Life of Saiki K is definitely a good one! The main character is honestly relatable and it's so funny.

You have probably seen Hunter x Hunter, Steins;Gate and all those. One I can recommend is Vinland Saga.

Beastars on Netflix is pretty good imo. Isekai anime like Tanya the Evil or The Rising of the Shield Hero are decent as well. And already recommended, Demon Slayer is very very enjoyable.

Blood Blockade Battlefront, some action adventure of a reporter in a city full of aliens.
Violet Evergarden, a bittersweet story about an ex soldier trying to find her missing boss and being a letter writer despite having grew up emotionless.
Yuri on Ice, a lighthearted (mostly) figure skating anime.
Banana Fish, about a photographer caught up in a gang conflict which led to a dangerous drug scheme.
A Whisker Away, about a girl who wants to be a cat so his crush could love him. This one's pretty simple but I like it.
