Would it work? We're talking about laying in bed or any where you feel like, using a plastic (or any other material) bag resistent enough to simply not be ripped off by your unconscious body (so grocery bags are not adapt) and covering it in tape wrapping (your shoulders too) to create a safe and unrippable padding (you won't see anything though). In theory the cause of death should be asphyxiation.
What are the chances of dying with this?

Notoriously difficult method that many people have failed with, especially the way you're laying it out. I'm not sure you could find a non-porous plastic bag that you couldn't tear or loosen (even the tape would be a weak point) if you weren't desperate. (There is stuff out there on recommended bags, I don't know anything about the bags in question as this method is dubious to me) I would not rate your chances very high at succeeding with it, even though it's theoretically lethal - it's kind of like a worse partial in that regard, where the survival instinct barrier is even higher and it's even easier to mess it up.

Also, noting that the body has some of the most attenuated responses to a build up of CO2 - suffocating on CO2 is very painful, and it's why people use inert gases instead of a slow, steadily uncomfortable buildup of CO2. Accordingly, as you seem to be aware of, you will freak out and be motivated very strongly to just remove it yourself.

Have you seen Trainspotting 2? More specifically the scene where spud attempts suicide by this method. I figured out it would've been painless yet discomfortable.

The only way to make this remotely viable is to take high quantities of benzos and some vodka beforehand, as well as beta blockers. There is a video by derek humphry of final exit on youtube, which explains the process in detail. Even so, it doesn't seem to be a very often discussed method in here. Among the less messy solutions, it seems to suffer the same defects as others ie the unconscious body trying to survive. Having said all that, there ought to be a direct positive correlation between high sedative intake and lack of unconscious resistance, it seems logical.

In my experience, cinema usually shows, like any death, a quite unrealistic scenario. People getting shot or stabbed and dying fairly immediately for example. And people hanging after kicking away a chair. I wouldn't rely on a film to guide your intentions.

What were your details and process, if you feel able to tell us?
Used tape to seal trash bag around my neck. Breathing in and out is what did it for me the bag kept sucking into my mouth. I even drank first and took sleeping pills to try to diminish survival instinct when I passed out. Just too much of a panic inducing method for me.

I think I know of a way to get past the CO2 issue.
Pretty much you're going to be needing a CO2 scrubber, which is lye (sodium/potassium hydroxide). I have no clear way on how to make this simple apparatus, but I guess you get a big container and add a few pounds of that stuff and make a tube and attach it to the bag and the container.

The CO2 is an acid gas, when it makes contact with the hydroxide bases, the bases absorb and react with the gas to form carbonate salts and water.

The only way reliable way is with handcuffs. But even then you could hook the bag with your head onto something and rip it off. You cant resist it. Drugs and handcuffs is the only way really. Why such an unpleasant way though?

Apparently it is recommended to wear a wide brimmed hat under the plastic and a paper painters mask, to prevent the plastic getting too close to your mouth and nose. One seems to need a bag big enough to be able to avoid CO2 issues before the pills kick in and being able to evaluate the point at which you feel the pills taking effect before putting the bag. Taping the bag is not recommended. Humphry recommends elasticating the bag. The pills are taken and the bag placed and then held open at the neck until the arms relax as the meds kick in, at which point the arms drop and the elastic seals the deal, the bag size allowing normal breathing to take place until the person is deeply unconscious. I'm not sure this is a method i would choose but well, this is a forum for ideas and the exchange of them.

This has been asked before but would a plastic bag with CO2 scrubbers in it work? Someone else said you'd need a counter-lung
