I am considering leaving someone's contact info in my note as I do not trust my legal next of kin to share my note with others. If I do so, will they contact this person by phone?

Possibly, but not guaranteed.

Have you thought about making a legal will, where you could leave things (including notes) to that person?

Guessing the wording in you're statement provides the answer. Agree with @autumnal ..... you could also send timed email to persons desired.

Possible. They will not go through a list of names. They will push to find the next-of-kin first and foremost/authorized representative with legal documentation. I had one done but have a brain fart and can't think for the life of me. Authorities want to figure out things as quick as possible and everything else is secondary.
