does anyone have any favorite recipes theyd like to share? beginner friendly is a plus!!

Here's the most simplistic recipe from my personal collection:

Homemade Ketchup

1 6 oz. can Unsalted, Unsweetened Tomato Paste

1 ½ tsps. Apple Cider Vinegar

¼ tsp. + 1/8 tsp. Onion Powder

¼ tsp. Garlic Powder or Garlic Granules

1/8 tsp. Ground Allspice

1/8 tsp. Black Pepper

1/16 tsp. (1 Pinch) Ground Cloves

1. Place the tomato paste in a small bowl. Add the onion powder, garlic powder, ground allspice, black pepper, and ground cloves.

2. Add the apple cider vinegar. Mix the ingredients with fork until thoroughly combined. Ketchup can be served immediately or chilled in a covered bowl in the refrigerator for 2 - 3 days.

Notes: Other types of vinegar like distilled white vinegar, white wine vinegar, or red wine vinegar can be substituted for apple cider vinegar.

2. https://www.suwanneerose.com/2019/11/3-sisters-harvest-bowls/ (3-Sisters harvest bowls, Native American dish NW)
SO INCREDIBLY yummy. I add (on the side) baked tofu and layer with arugula, quinoa and separate the ingredients in different cannisters (squash - separate) (corn, bean rosemary sage and thyme mix) (tofu) (quinoa) (arugula). Top with hulled sunflower seeds and a few dried cranberries. Yummy homemade dressing of cranberry preserves, balsamic or ACV, and olive oil). Super nutritious, I could never get sick of this.
3. https://bakerbynature.com/the-most-wonderful-vegan-chocolate-chip-cookies-ever/ (vegan choc chip cookies) the applesauce really makes them delicious. I freeze 1/2 the batch to pull out the week following. I might make some tonight
4.https://lovingitvegan.com/vegan-carrot-cake-lemon-buttercream-frosting/ I use muffin cups, instead. Makes apx 12 depending on how much dough you eat, baked abt 25 mins)

When I can manage, it's fun and somewhat simple to experiment with homemade pizza! Pizza places often sell their dough if you ask, and grocery stores should have stuff in the freezer, and making your own from scratch is always a possibility! Then just go wild with toppings (I think my fave is roasted garlic, broccoli, cherry tomatoes and red onion.) Happy cooking!

I just learned to use my dehydrater (instant pot). I needed black limes (it only took 24 hours and then I'd lost interest). I'm interested in all things cooking and will be beginning a new job for a small biz (office work) where they make a lot of homemade foods. the recipe required black limes, which I've saved. I will never dry a whole lime again, they sell them at specialty spice stores. They look like shrunken heads I've preserved in a glass jar.
I'd love some recipes. I love food and eat well when not down, miserable contemplating u-no.

I have issues with brain fog and concentration so a lot of recipes are inaccessible to me most days. The crossover between simple and beginner-friendly is pretty wide though!

Chicken, broccoli, and mushroom stir fry

Garlic chicken and potatoes

I come back to these two a lot and they seem to go over well. No kitchen wizardry required and the most 'unusual' ingredient here is probably sesame oil, which isn't very expensive and you can find it anywhere.

If you're not interested in baking, feel free to tell me to fuck off, but a lot of people find that it's easier to start out with than cooking. It's also a great way to get on peoples' good sides lol. It's just harder to dislike a person if they brought brownies with them or whatever. I'm especially fond of these two recipes since they're flexible while also being really pretty uwu

Apple cobbler (but really you can use just about any pome/drupe fruit)

Thumbprint cookies (but if you're not a jam/jelly person, they're still amazing plain)

I forgot to add this one: https://pinchofyum.com/anything-you-have-coconut-curry-soup (Good to use sweet potatoes, potatoes mix - blend with hand-mixer in pot) Smooth, yummy for coming "down" off of anxiety or whatever. Mock chicken is just as good, as a sub for tofu. Or meat.

I make pancakes on weekends sometimes, so I'll share the recipe our fam uses.

1 cup flour
1 tbsp baking powder
1 tbsp sugar
1 pinch salt

1 cup milk
1 egg
1 tsp vanilla extract(optional I guess)

Mix all ingredients in a bowl, and just cook some on a pan. This recipe only makes about 2-3 pancakes depending on your pan size, so you can just double or triple it.

My homemade Casserole with Steakmince,Canned Potatoes, Canned Peas+-Carrots, Canned Mushrooms, 2 Oxo cubes, a tablespoon of Hoisin Sauce, a sprinkle of Garlic powder! Fry mince crumble in oxo cube cook until well brown , spoon into roasting tray with large ladel with holes in it so as to let the fat drain out, add Potatoes Peas Carrots and Mushrooms,Mix well, put tray in oven at 180 for 20 mins take out and spoon up a plateful, put the rest into Tupperware bowls and into freezer for another day and you're done!
