I'm only going to attempt to CTB this way if my first suicide attempt fails, and I become a quadripelgic. And this essentially becomes my only way to make a second suicide attempt.

Yeh, a lot. There's a reason animals go psycho when starving.

"The sound of insects. Record of a Mummy" movie fully describes what person goes through during starvation. It's a story of man who decided to end his life by starving himself to death.

It's a nasty way to go, and it's very slow. There's plenty of time for an intervention, so it's especially risky as far as that goes.

The hunger will go away, but that'll be replaced with full body pain that just gets worse and worse. Your organs will ultimately fail, you'll be jaundiced, your hair will fall out, your joints will swell, your muscles will disappear, you won't be able to maintain body temperature... And if you go long enough and then change your mind, eating again might even kill you.
The final stages are full of psychosis and convulsions.

If you starve yourself via bulimia it's not as bad. But it's also very random and there are many ways for people to intervene. It's hard to hide starving to death. But starving is a pretty common form of suicide in aged care hostels. Though these are usually people who are so elderly and sick that they're right on the edge and it doesn't take much.

You can survive on water for days. I have done it for 16 days at once. I lost the appetite after 2 days and after a week felt light headed and dizzy. Perhaps electrolyte imbalance. People have survived on water for months. Check youtube, there are people doing even 50 days water fast. Ofcourse it depends on your health at the moment, on how soon you would go.

You'll almost certainly eventually eat eventually unless you're force not to

Depends. People with catatonic depression or those using certain drugs often have to be monitored for signs of starvation and malnutrition.

Do not to that. It is horrible and not a peaceful or a good way to die.

I don't think it is a good idea in terms of reliability and comfort. Like others said, it is very likely to be intervened on when you are near dying and also even up to the point of death, it is very painful and a horrible way to go. The only way I could see it being viable and with the highest chance of success is if you have a place ALL to yourself (no roommates or anyone around you who might try to do a welfare check on you) for an extended amount of time. Also about dehydration with starvation, it will still be an awful way to go (not peaceful at all), but then if you only had liquids (water) it would take many weeks (or more than month) to pass (yet still uncomfortable to go) and that is MORE than enough time for neighbors or anyone around to intervene.

Yeah... You add dehydration to the mix and all that hell becomes even more agonizing. You will go quicker, but few people would be able to follow through, I suspect.
