The PPH is not worth the paper it´s printed on. Some people call it the essential suicide bible. Other people call it an overpriced, unreliable book based on assumptions and insufficient research.

To answer your question: SN is an aggressive substance. I´m saying this regardless of how i feel about the SN method in general !
It has been known for decades that sodium nitrite in food causes serious health damage and even cancer. But still it continues to be used in the food industry. The companies want to preserve their food as long as possible to make a lot of money.

But in this case we are not talking about a certain percentage in the food, but about 95%+ pure SN. Think for yourself and you will find the right answer to your question.
