Things are constantly getting worse and I'm wondering if an antacid is really necessary for taking SN? Can baking soda be substituted instead?

Not necessary, but it would help, if you dont have it you could use bicarbonate.

Any idea of how much bicarbonate? Like a teaspoon in a glass of water maybe?

I suggest testing bicarbonate. It makes me nauseated on an empty stomach.

I'm in Canada and I believe they've been removed from the shelves for some reason

It's unlikely that all antacids were removed from shelves (though possible).
Milk of Magnesia very common in herbs, minerals, and alternative medicine stores.

You may find this helpful, I've underlined relevant stuff (answer question + things to look for) –

What they do:
  • May help SN absorption
Do I need those? No. But many use these.
Are they available?OTC / Internet
(1) Antacids
What they do:Neutralizes acid on the spot
Known antacids:Milk of Magnesia.
Stan recommended any antacid with magnesium hydroxide. Look for ingredients.
Can I use other antacids?We don't know.
  • PPH previously recommended sodium bicarbonate, changed to acid-regulator.
(2) Acid-regulators
What they do:reduce acid creation beforehand
Which should I use?H2-receptor antagonists only
Known acid-regulators:Cimetidine/Tagamet, Rantidine/Zantac, Famotidine

Nothing is necessary, but antacids and painkillers are trivially easy to get might as well use them.

The only necessary thing is SN mixed with water. Everything else is supposed to make it easier and help quickly absorb the SN in your body.
It depends on how you think your body will react to SN.

The Canadian government responded to a scare about ranitidine (Zantac et al) in October last year by stopping distribution pro temps.
It is thought that the medication may contain a carcinogenic impurity.
Several other countries have done something similar.

Other antacids are still available.
