What would happen if I ingested 25 grams of sodium nitrate instead of nitrite?

I'm curious because I probably won't be able to test my SN so I'm just wondering what would happen?

I think you wouldn't die from it. Someone else here did the same and lived...they did it by accident as they purchased the wrong product. Nitrate doesn't seem to be very deadly.

It would give you symptoms similar to food poisoning but most likely it wouldn't be lethal. Sodium nitrite changes your hemoglobin into methemoglobin, which doesn't happen with nitrate. And methemoglobin instead of hemoglobin makes the oxygen transport impossible and that's what kills you. Most of other symptoms happen both with nitrate and nitrite.
